  • 2 cups mixed tropical fruit such as mango, pineapple, and papaya, chopped
  • 1 tablespoon citrus zest from lime or lemon
  • 1/4 cup honey or simple syrup for sweetness
  • 1 cup water hot or boiling, to dissolve the honey

Method
 

  1. Heat the water until just boiling and stir in the honey until fully dissolved, creating a sweet syrup. Pour the syrup into a mixing bowl and add the infused rum, mixing well to combine.
  2. Add the chopped tropical fruits to the rum mixture, folding gently to coat evenly with the infused liquid. This layering begins the flavor infusion process.
  3. Use a zester or fine grater to carefully zest citrus directly over the mixture, releasing bright aromatic oils. Stir gently to distribute the zest throughout the mixture.
  4. Pour the entire mixture into a freezer-safe container, spreading it out evenly and smoothing the top with a spatula.
  5. Place the container in the freezer and let it chill for at least 4 hours, gently stirring every hour to break up ice crystals and maintain a slushy texture.
  6. Once frozen and with a soft, scoopable consistency, serve the tropical infused rum ice in glasses, garnished with additional fruit or citrus zest if desired. Enjoy immediately for a refreshing, frozen treat.

Notes

For an extra kick, add a splash of coconut milk before freezing. You can also experiment with different tropical fruits and citrus varieties for varied flavor profiles.
