- Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper or a silicone mat. Gather all your ingredients and tools.
- In a large mixing bowl, combine the salted almonds, dried cherries, seeds, and oats. Toss them together until evenly mixed.
- In a small saucepan, warm the honey or maple syrup with the oil over low heat until just combined and fragrant, about 1 minute. Stir in the cinnamon or paprika if using.
- Pour the warm syrup mixture over the dry ingredients and gently fold with a spatula until everything is evenly coated and sticky.
- Spread the mixture evenly onto your prepared baking sheet, pressing it flat with the back of the spatula for even roasting.
- Roast in the oven for 12-15 minutes, shaking or stirring halfway through to promote even caramelization. Keep a close eye after 10 minutes to prevent burning.
- When the nuts are golden and fragrant, and the mixture smells toasted, remove from the oven and let cool on the baking sheet for at least 10 minutes. The mix will crisp up as it cools.
- Break the cooled mixture into chunks if desired, then transfer to an airtight container. Store at room temperature for up to 2 weeks, or freeze for longer storage.
Notes
For extra flavor, sprinkle additional spices or a pinch of salt after roasting. You can also stir in chocolate chips or toasted coconut flakes once cooled for added variety.
