Method
 

  1. Heat a saucepan over medium heat and add the sugar. Stir constantly with a whisk until the sugar melts and turns a deep amber color, filling your kitchen with a caramel aroma.
  2. Carefully pour the heavy cream into the caramel while whisking continuously; the mixture will bubble vigorously. Continue whisking until the caramel and cream are fully combined and the sauce is smooth.
  3. Add the butter and stir until it melts completely into the caramel sauce. Remove from heat and let it cool slightly.
  4. Pour the caramel sauce into a blender along with the ice, milk, and a splash of the warm caramel. Blend on high until the mixture is smooth, icy, and well combined, with a thick slushie consistency.
  5. Taste the slushie and add more caramel if you desire a richer flavor, then give it a quick blend to incorporate.
  6. Pour the creamy caramel slushie into glasses. Garnish with a drizzle of extra caramel or a sprinkle of sea salt if desired for an indulgent finishing touch.

Notes

For a smoother texture, blend longer and use very cold ice. Adjust the caramel sweetness by adding more or less caramel sauce during blending.
